Chef Jamie DeRosa fell in love with cooking as a child, making paella with his grandmother. Those hours spent learning her tricks and picking up the basics of simple, rustic cooking laid the groundwork for a passion that would take him as a young adult to Johnson & Wales University in Miami. In addition to his formal schooling, Chef DeRosa has also received some amazing on-the-job training from many of the country’s best chefs, including James Beard award-winners Allen Susser and Wolfgang Puck; Master Chef Joachim Splichal; and Iron Chef Geoffrey Zakarian. Chef DeRosa opened Tongue & Cheek on South Beach in April of 2013 and, just over one year later, thanks to the approachable, ingredient-driven, American menu it continues to be one of the city’s go-to culinary hotspots.

A Rendezvous with Rum at Radio

Last week MMTM was invited to an intimate Flor de Caña rum tasting and food pairing in the cool and understated SoFi bar, Radio. What started off as a pop-up bar in early 2013 has transformed into a local favorite, beaming with craft cocktails and laid-back ambiance. With dim lighting, home décor, and a pool table to keep a friendly game going, Radio has become one of Miami’s hidden libation gems.

Sandwiches & Sweets: My First SOBEWFF

Since moving to Miami eight years ago, I’ve wanted to attend the South Beach Wine & Food Festival, but always found an excuse not to go. Too touristy, too crowded, too expensive. Maybe I was just scared of my own daunting perception of what I thought it would be. Well, regardless of all that, this year the excuses finally ran out. I’m now part of a dynamic food blogging duo and it would just be flat out wrong not to cover South Florida’s largest, and arguably one of the nation’s most important culinary celebrations, showcasing the talents of the world’s most renowned wine and spirits producers, chefs and culinary personalities. The time had finally come to see what this shindig was all about.

T&C Taste Test: Dinner vs. Brunch

To dine or to brunch, that is the question… OK, so maybe it’s not the question (a la Hamlet), however often times when a new restaurant opens it can be hard to decide when to first go: for dinner or for brunch.

I recently experienced this very serious dilemma when Tongue & Cheek arrived on the South Beach scene earlier this year. So, of course, I did what any logical (?) person would do and visited on back-to-back days – Friday night for dinner and Saturday morning for brunch – thanks to two great Gilt City tasting menu deals.
